Pork Carnitas

You want clean eating? Serve this with veggies – skip the bun.  This is a GREAT recipe.

  • 5 lb pork butt roast
  • 5-7 garlic cloves
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tsp black pepper
  • 2 tsp dried oregano
  • ½ tsp cayenne pepper
  • ½ tsp cinnamon
  • 2 tbsp kosher salt or sea salt
  • juice of 2 limes
  • juice of 2 oranges

Trim off as much fat as possible (cutting out the larger “white” areas). Leaving some additional fat on the pork shoulder will add flavor and can easily removed at the end. Mix all spices. Make slits in the pork and add in the whole garlic to the slits- a few on top, sides and bottom. Rub spice mix over the meat to ensure it is fully seasoned. Place in the crockpot on LOW (or Instant Pot!) and add the lime and orange juice round the meat. Place the cover on top and cook on LOW for 8-10 hours. Once the meat is cooked it will fall of the bone.
