Easy Power Breakfast

I’m usually a cold cereal kind of gal, but every so often, especially after a hard workout, I need eggs. And cheese.

This is so easy…


  • 2 eggs
  • Non-stick cooking spray
  • Salt/pepper
  • Shredded cheddar cheese

Preheat oven to 400 degrees F.

Spray a small, oven-proof bowl. Crack two (or more?) eggs into it. Set it in the oven for approximately 10 minutes (depending on how you like your eggs you might need more or less time; I like the white cooked, but the yolk soft).

Jump in shower.

When ready, pull out of oven and sprinkle with salt/pepper, cheese. Let sit until cheese melts.


  • Add baby spinach leaves and mozzarella cheese
  • Add salsa and Monterey Jack cheese
